Easiest + Healthiest Snack Series
Ok so my struggle to get fit is real, back home late from work we always need a snack to get us going. I am a foodie who always played a sport until 3 years ago when I tore a ligament which was mis diagnosed and it later turned into a painful journey of recovering from Achilles tendinitis. It has taken me almost 2.5 years to recover from the injury but more than that to gain my confidence and overcome inertia. I have a long way to go to get back to my marathoning days where running was routine and a day without a spin class was impossible to imagine.
I have recently started working out more religiously (basically an elliptical machine I got at home) and to support that (apart from the occasional cheat days) I try to eat healthy. The simplest snack that also is the yummiest one for me is Avocado done multiple ways. I ALWAYS have avocado at home – because Mr K and I always feel the urge to snack and this is a healthy option. Sharing a few delicious snack recipes through these series, that are quick and easy enough for anybody to make. Vetted and approved by the hubby !
